Fuel your afternoon with this delicious mix of healthy fats and protein.
- 1 slice of wholemeal or rye bread
- 1 egg poached
- 1/ 2 avocado smashed
- 1 large piece of smoked salmon
- 1 small handful of pumpkin seeds
- Place a pan of boiled water on the hob, when bubbles start to form place your egg into the pan and poach for 3-4 minutes.
- Meanwhile mash half of your avocado and season.
- Place your bread into the toaster for 2 minutes.
- Spread your toast with the avocado, place on your smoked salmon and egg and sprinkle with your pumpkin seeds.
