Vegetarian Vegan Gluten-free
- 1/2 red onion - diced
- 1 tin of chickpeas - rinsed and drained
- 2 sundried tomatoes - chopped
- 1 small bunch of coriander - chopped
- 1 teaspoon garlic powder - optional
- Pinch of salt and pepper
- Drizzle of balsamic vinegar
- Put all of your ingredients into a bowl, saving a pinch of fresh coriander.
- Mix until the ingredients are coated fully, adding more salt and pepper if needs be.
- Finish your salad with a sprinkle of coriander and serve up!
- If you're looking for added fuel, serve with a toasted pitta or flat bread and even a dollop of hummus.
