5-minute tomato and chickpea salad


Perfect for a speedy vegan meal that costs less than your morning coffee.

  • 1/2 red onion - diced
  • 1 tin of chickpeas - rinsed and drained
  • 2 sundried tomatoes - chopped
  • 1 small bunch of coriander - chopped
  • 1 teaspoon garlic powder - optional
  • Pinch of salt and pepper
  • Drizzle of balsamic vinegar


  1. Put all of your ingredients into a bowl, saving a pinch of fresh coriander.
  2. Mix until the ingredients are coated fully, adding more salt and pepper if needs be.
  3. Finish your salad with a sprinkle of coriander and serve up!
  4. If you're looking for added fuel, serve with a toasted pitta or flat bread and even a dollop of hummus.
