Avocado and salmon on toast

Serves 1 Prep time 5 minutes Cook time 3- 5 minutes


  • 1 slice of wholemeal or rye bread
  • 1 egg poached
  • 1/ 2 avocado smashed
  • 1 large piece of smoked salmon
  • 1 small handful of pumpkin seeds


  1. Place a pan of boiled water on the hob, when bubbles start to form place your egg into the pan and poach for 3-4 minutes.
  2. Meanwhile mash half of your avocado and season.
  3. Place your bread into the toaster for 2 minutes.
  4. Spread your toast with the avocado, place on your smoked salmon and egg and sprinkle with your pumpkin seeds.
