Tasty bean tacos

Mix this vegetarian recipe up with whatever beans you fancy and add some spice to your mid-week menu!

Tasty bean tacos

Serves 2 Prep time 5 Cook time 12

Ingredients

  • 2 tins beans - kidney, black or broad - rinsed and drained
  • 1 tin chopped tomatoes
  • 1 white onion - chopped
  • 1 tspn cumin
  • 1 tspn olive oil
  • 1 tsp paprika
  • 1 tsp chilli flakes
  • 1 garlic clove - finely chopped
  • 4 wraps or tacos
  • Small bag of greens
  • 1 avocado - chopped
  • 30g cheese - grated

Method

  1. Fry the onion and garlic in the olive oil to soften and add the cumin.
  2. Add the rinsed beans, tomatoes, paprika and chilli flakes and season and cook gently for 5-10 minutes.
  3. Warm through the wraps, place on the greens and bean mixture and top with some tasty grated cheese.
  4. Add salsa or sour dream
