Mexican chicken and avocado tacos

Perfect for sharing, these Mexican chicken and avocado tacos are the perfect party-time treat.

Serves Makes 16 Prep time 60 minutes Cook time 45 minutes


  • 1 red chilli, roughly chopped
  • 8 small soft tortillas, toasted
  • Zest and juice of 2 lime
  • 1tsp fennel seeds
  • 1½ tbsp dark soft brown sugar
  • 4 bay leaves
  • 28g pack coriander, stalks finely chopped/leaves torn
  • 500g tomatoes, roughly chopped
  • Zest and juice of 1 orange
  • 1.5kg chicken pieces
  • 3 red onions, cut into wedges
  • 6 garlic cloves, finely chopped/crushed
  • For the avocado salsa:
  • 2 avocados
  • 1 bunch spring onions, finely chopped
  • Zest and juice of 2 limes
  • 1 granny smith apple, cut into 1cm chunks
  • 28g pack coriander, stalks finely chopped and leave roughly chopped
  • 1 green chilli


  1. Toast the chilli and fennel seeds in a large ovenproof casserole dish for a couple of minutes or until fragrant.
  2. Remove from the heat, grind in a pestle and mortar, and stir in 1tbsp of boiling water, along with the sugar, lime and orange juice.
  3. Preheat the oven to 150˚C, gas mark 2 and fry the chicken pieces over a medium heat for 20 minutes, until golden and set aside.
  4. Add the onions, cover and cook for 10 minutes, until the onions are soft.
  5. Now stir in the garlic, bay leaves and coriander stalks; cook for 3-5 minutes.
  6. Raise the heat, add the water, and return the chicken to the pan.
  7. Stir in the citrus spice mixture and tomatoes, and bring to the boil, before covering and baking for 2 hours.
  8. Remove the cover and cook for another hour and remove the chicken by placing on a plate.
  9. Turn the oven up to 220˚C, gas mark 7, and return the dish to the oven, uncovered, for a final 20-30 minutes, until the sauce is thick. Shred the flesh of the chicken and discard the bones.
  10. Stir the shredded chicken and coriander leaves into the sauce.
  11. To make the salsa, mash the avocado flesh in a bowl and stir in the remaining ingredients, before serving alongside the chicken.
