Pasta with fresh tomatoes, garlic and basil


This simple yet effective pasta dish is perfect for pre-race fuel.


Serves 1 Prep time 10 minutes Cook time 20 minutes

Vegetarian Vegan


  • 1 serving rigatoni or other pasta
  • 1 medium-sized, beautifully ripe tomato
  • 1 clove garlic
  • A handful basil leaves, roughly chopped


  1. Roughly chop the tomato into cubes.
  2. Crush the garlic and combine these in a bowl with the basil.
  3. Add a dash of olive oil and a pinch of salt.
  4. Stir and leave to marinate while the pasta is cooking.
  5. Cook the pasta according to instructions, drain and return to the pan.
  6. Pour the tomato mixture on top and stir to combine. Serve immediately.
