Serves 1 Prep time 5 minutes Cook time 5 minutes



  • 1 slice of rye or wholemeal bread
  • 1/2 avocado
  • 2 eggs
  • A dash of milk
  • Salt and pepper


  1. In a bowl whisk two eggs with some salt and pepper and a dash of milk.
  2. Meanwhile slice half of your avocado into strips and place your bread into the toaster for 2 minutes.
  3. Scamble your eggs in a frying pan until soft and fluffy.
  4. Place your avocado onto the toast, top with your eggs and finish with some salt and pepper.
