Spiced bean and smoked ham salad

If you're vegetarian it's easy to change up this salad. Opt for 1-2 soft boiled eggs instead.

Serves 1 Prep time 5 minutes



  • A portion of salsa from last night's dinner
  • 2 slices of smoked ham diced
  • 100g fresh spinach
  • Splash of olive oil


  1. Add the chopped ham to the bean salsa.
  2. Mix in a bowl with the fresh spinach leaves and the olive oil and serve up.
