If you're vegetarian it's easy to change up this salad. Opt for 1-2 soft boiled eggs instead.
- A portion of salsa from last night's dinner
- 2 slices of smoked ham diced
- 100g fresh spinach
- Splash of olive oil
- Add the chopped ham to the bean salsa.
- Mix in a bowl with the fresh spinach leaves and the olive oil and serve up.
