Vegan tofu noodles

Vegan tofu noodles

  • 200g firm tofu
  • 100g wholewheat noodles - or ones you prefer
  • 2 tsp rapeseed oil
  • 1 tsp sesame oil
  • 1 spring onion - trimmed and thinly sliced
  • 1 garlic clove - finely chopped
  • ½ red chilli - de-seeded and finely chopped
  • 2cm piece ginger - peeled and finely chopped
  • 4 large carrots - peeled and chopped lengthways
  • 50g mushrooms - thinly sliced
  • 1 red pepper - de-seeded and sliced lengthways
  • 1 orange pepper - de seeded and sliced lengthways
  • 1 tsp tamari or soy sauce
  • Juice ½ lime
  • 1 tbsp finely chopped coriander
  • 1 tbsp sesame seeds (optional)
  • 2 tsp tamari or soy sauce
  • 2cm piece ginger - peeled and grated or chopped finely
  • 1 garlic clove - finely chopped
  • 2 tbsp lemon or lime juice
  • 1 tsp sesame oil


  1. First things first - marinade! Make yours by mixing together all the ingredients in a small bowl.
  2. Drain the tofu by placing on several sheets of kitchen paper on a plate, with several more on top and something heavy, like a large cookery book or pan on top.
  3. Leave for at least 15-minutes before cutting the tofu into cubes and placing into a small bowl with the marinade. Cover and leave your tofu to marinade for 30-minutes to an hour.
  4. Meanwhile, cook the noodles following the instructions on the packet. Drain and sit them in a bowl of cold water.
  5. Heat a non-stick frying pan and add the tofu pieces, frying until hot and crispy.
  6. Once cooked, place the tofu on a plate and cover with foil to keep warm.
  7. In a large frying pan or wok heat the oils over a high heat before adding in the spring onion, garlic, chilli and ginger, stirring constantly for about 1-minute.
  8. Add the peppers and mushrooms and stir for another 1-2 minutes.
  9. Add the cooked noodles and toss well. Add the soy sauce and lime juice and mix until well combined and the pan is sizzling.
  10. Remove from the heat and dish up the noodles evenly into two bowls, topping with the crispy tofu pieces.
  11. Sprinkle with freshly chopped coriander and a sprinkling of sesame seeds and serve up!
